zucchini hummus

I love hummus, but making it from scratch can take some time. If you want a delicious healthy snack this zucchini hummus is quick to make and pairs great with paleo crackers or veggies. The best part is that you will hardly taste the difference.

zucchini hummus

Zucchini is a very versatile vegetable, it is rich in fiber benefiting digestion and helping to balance blood sugar levels. Zucchinis are also a great source of vitamin C, vitamin B6, and magnesium. They are also great for absorbing flavors, the combination of the tahini, herbs, and spices in this hummus recipe transform the zucchini into a one of a kind dip or spread.

This makes quite a big batch, which can be stored in the fridge for about a week, or can be frozen for a month.
