Zucchini is a very versatile vegetable, it is rich in fiber benefiting digestion and helping to balance blood sugar levels. Zucchinis are also a great source of vitamin C, vitamin B6, and magnesium. They are also great for absorbing flavors, the combination of the tahini, herbs, and spices in this hummus recipe transform the zucchini into a one of a kind dip or spread.

This makes quite a big batch, which can be stored in the fridge for about a week, or can be frozen for a month.

Zucchini Hummus
Ingredients
- 2 zucchini peeled and chopped
- 1/2 cup lemon juice
- 2 cloves garlic optional
- 1/4 cup olive oil
- 2/3 cup tahini
- 1 tsp ground cumin
- 1 tsp celtic salt
Instructions
- Combine all ingredients in a blender, until smooth.
- This mixture thickens as it sits. Adjust seasoning. Serve with favourite crackers or vegetables.
